養生豆奶酪凍
Revitalizing Soybean Pudding
Serves 8 人份
材料:
黃豆……30g
南杏……30g
清水……3杯
熱開水……400cc
牛奶……200cc
碎冰糖……1大匙
現成蜜紅豆……適量
吉利丁……4片
冰水……1000cc
Ingredients
30g soybeans
30g sweet almonds
3 cups water
400cc hot water
200cc milk
1tbsp. crushed rock sugar
A little bit of ready aduki beans
4 pieces gelatin
1000cc ice water
作法:
1 黃豆、南杏洗淨瀝去多餘水分,用3杯清水浸泡4小時,再移入電鍋內隔2杯清水蒸熟。
2 吉利丁用冰水泡軟待用。
3 將作法(1)材料倒入調理杯內加入熱開水充分攪拌成非常綿細,再倒入小鍋中先加入牛奶攪拌再用中火煮開即可熄火,待約2分鍾再加入泡軟的吉利丁拌勻,最後倒入模型中待涼移入冰箱冷藏享用時加入現成蜜紅豆即可。
1 Wash and drain soybeans and sweet almonds Add 3 cups of water to soak for 4 hours before putting into stew pot to steam with 2 cups of water .
2 soak gelatin in ice water for later use .
3 Pour the steamed soybeans and sweet almonds into the blender with hot water and blend thor-oughly into a fine mixture .Pour the mixture and milk into a small pot and cook until boiling with medium heat .Switch off the stove and let it cool for 2 minutes before adding the soft gelatin .Mix it well and pour into molds .Put into the refrigera-beans before serving .
利用南杏作成甜點,除了含豐富鈣質外,又有天然香味可替代人工香料的使用。而黃豆含有豐富的蛋白質、維生素B、礦物質鉀、鈣、鐵、鎂、可預防肌膚老化和黑斑的形成,並保護心血管。
