涼拌香茄
 
Eggplant Salad
 

材料:
茄子……2支
大蒜……2粒
油……5杯
調味料:
花椒粒……適量
熟白芝麻……適量
紅辣椒醬……1大匙
天然釀醬由……2大匙
黃糖……少許
 
 
Ingredients
 
2 eggplants
2garlic cloves
5 cups of cooking oil
 
Seasonings
 
A Moderate amount of Sichuan peppercorns
and cooked white sesames
 
 
B 1 tbsp. of red chill sauce
 
 2 tbsp .of natural soy sauce
   a little bit of yellow sugar
 
 
 
作法:
1 茄子洗淨擦乾水分切2公分段,大蒜去皮切細末待用。
 
Wash and slice the eggplant into 2 cm long per slice .Peel the garlic and finely chop for later use .
 
 
 
 
 
2 油入鍋用中小火預熱,待油產生油紋時放入茄子改用中火並不停翻動茄子,待茄子熟軟時撈起瀝去油漬待涼。
 
 
Pour cooking oil into the frying pan at medi-um-low heat .Add the eggplants when the cooking oil starts to boil .Switch to medium heat .Keep on stirring the eggplants until softened .Remove the eggplant from the fry-ing pan and drain the oil .Let it cool down for later use .
 
 
 
 
 
 
3調味料花椒粒用調理機磨成粗粉即可和大蒜、調味料紅辣椒醬拌勻淋在茄子上享用。
Add seasonings A into the food processor to grain into fine powder .Mix with garlic and seasonings B before spreading evenly onto the eggplants .It is then ready to serve .
 
 
 
 
 
茄子含豐富維生素B1、B2、P,經常食用能增強血管彈性,預防血管破裂,可減少皮下瘀血的產生和動脈血管的硬化。炸茄子時需用乾淨的油,油溫控制多練習就能習慣其中的快、穩技巧。
 
Eggplant is rich in vitamin B1,B2and P.If consumed regularly ,it helps to enhance the arterial elasticity and prevents arterial damage ,which further reduces hemorrhagic rash and arteriosclerosis. Use fresh and clean cooking oil for frying the eggplants .After several practices ,you will soon familiarize with timing and techniques of master-ing the oil temperature.
